Banana Nut Bread (powerbar replacement)
Submitted by:Jesse KropelnickiThis recipe is a great, healthy alternative to Powerbars or Nature's Valley bars during your pre-workout window (within 1 hour prior to your workout)....especially during the off season when it's not as critical to be race specific!
Ingredients
- 2 whole eggs
- 2 egg whites
- 1/3 cup skim or soy milk
- 1 1/2 cups banana (very ripe)
- 1 cup honey
- 3 tablespoons smart balance oil or canola oil
- 3 tablespoons unsweetened apple sauce
- 3/4 teaspoon salt1
- 1/2 teaspoon cream of tartar
- 1 teaspoon cinnamon
- 2 cups whole wheat flour
- 3 scoops vanilla whey protein powder
- 3/4 teaspoon baking soda
- 2 teaspoons baking powder
- 1/4 cup chopped walnut
Instructions
1Combine all ingredients; pour batter into greased loaf pan. Bake at 325* for about an hour, or until toothpick inserted in center comes out clean.
2Let cool 10 minutes in pan, 10 minutes on wire rack,
3Cut loaf into 10 even slices.
