Black Bean Cakes with an Over-Easy Egg

It sounds strange to put an over-easy egg on a black bean burger, but let me tell you, the ooey-gooey yolk makes a fantastic sauce!
Ingredients
- 3 Tbsp olive oil 5 eggs
- 1 can (15oz) black beans, rinsed and drained
- 1/2 cup panko
- 2 Tbsp fresh cilantro, chopped
- 3/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp cayenne pepper
- 1 garlic clove, minced
Instructions
- Place 1 Tbsp olive oil, 1 egg, and black beans in a food processor and pulse until chopped into a coarse paste, about 20 pulses.
- In a bowl, combine bean mixture with 5 Tbsp panko, garlic, and spices. Form into 4 patties.
- Place 3 Tbsp panko into a shallow dish and dredge the patties in the panko.
- Heat 1 Tbsp olive oil in a non-stick skillet, then add the burgers, cooking 3 minutes on each side.
- Remove patties from skillet and place on a plate to keep warm.
- Wipe the skillet clean, add the remaining olive oil, then crack the 4 eggs into the pan.
- Sprinkle with salt and pepper, cover with a lid, and cook for 4 minutes (5 if you want firmer yolks).
- Plate the burgers, each with one egg on top.
- Enjoy with some veggies!
