Pumpkin Bread (powerbar replacement)
Submitted by:Jesse KropelnickiThis recipe is a great, healthy alternative to Powerbars or Nature's Valley bars during your pre-workout window (within 1 hour prior to your workout)....especially during the off season when it's not as critical to be race specific!
Ingredients
- 1 1/3 cup whole wheat flour
- 1/2 cup quick-cooking rolled oats
- 1cup honey
- 1 teaspoon baking soda
- 3 scoops vanilla whey protein poweder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup unsweetened apple sauce
- 2 whole eggs
- 1 cup canned pumpkin (not pumpkin pie mix)
Instructions
1Combine all ingredients; pour into greased loaf pan. Cook at 325* for about 25 minutes, or until a toothpick inserted in center comes out clean.
2 Let cool 10 minutes in pan and 10 minutes on wire rack.
3Cut loaf into 10 even slices.
