Quinoa with Orange, Cranberries and Goat Cheese

Ingredients
- 1.5 cups uncooked quinoa
- 1 orange, zested and cut into small pieces
- 3 oz goat cheese (soft log not crumbled)
- 1/2 cup dried cranberries or other dried fruit
- 1/4 cup walnuts
Instructions
- Cook quinoa according to package instructions, add orange zest to water for flavor.
- Stir in goat cheese until quinoa is evenly coated.
- Mix in orange, dried fruit and walnuts
