Tofu Sloppy Joes
Submitted by:Rachel GarganoI originally thought there's no way the words tofu and sloppy joe could go together but after trying this recipe I now know they're a great pair! Tofu crumbles very nicely, picking up savory flavors and seasoning easily. This recipe is perfect for a sandwich (in a post-workout grain window), over some spaghetti squash, or topping a salad.
TIP: Be sure to have plenty of napkins on hand!
Ingredients
- 1 block firm tofu
- 3 garlic cloves, minced
- 1/4 cup parsley, chopped
- 1/4 cup catsup
- 1/4 cup spaghetti sauce
- 1 Tbsp soy sauce
- 1 Tbsp jalapeno, minced
- 1 Tbsp olive oil
- 2 tsp brown sugar
- 2 tsp cider vinegar
- 1 tsp dijon mustard
- 1 tsp Italian seasoning
- 6 slices whole wheat bread
- 1 tsp chili powder
Instructions
- Mash the tofu in a medium bowl and set aside.
- In a large saute pan or wok, saute garlic in olive oil until fragrant - about 3 minutes. Then add mashed tofu and jalapeno. Cook for about 5 minutes.
- Add all other ingredients and cook for about 5 to 8 minutes, stirring frequently. Until most liquid is absorbed but the mixture is still sloppy.
- Serve on toasted whole grain bread, over a salad or over spaghetti squash - with plenty of napkins!
