Sweet Potato Hash with Eggs
Submitted by:Linsey CorbinThis is a great TCD friendly meal that can be eaten for breakfast, lunch, or dinner. It is filling, loaded with nutrient-dense ingredients, and easy to make. This recipe includes Canadian bacon, or back bacon. It is much leaner than bacon and has a great smoky flavor that works really well with this hash.
Ingredients
1 Tbsp olive oil 1/2 yellow onion, chopped 2 oz Canadian bacon, chopped 1/2 tsp thyme 1 sweet potato, peeled and cut into 1/2 inch cubes 1/2 red bell pepper, chopped 1/4 tsp salt 1/4 tsp pepper 2 cups baby spinach 4 eggs
Instructions
1. In a large pan heat olive oil over medium heat. 2. Add the onion, cook 5 minutes. 3. Add the Canadian bacon thyme, cook 2 minutes. 4. Add the sweet potato bell pepper. Season with S Reduce the heat, cover the pan, and cook, stirring occasionally, until the potatoes are tender and starting to brown, about 15 minutes. 5. Fold in the spinach and cook until just wilted. 6. Crack each egg into the pan. Cover and cook for 5 minutes. 7. Season with additional salt pepper just before serving. 8. Enjoy!
