Peach Crisp

This easily comes together with seasonal peaches and a few ingredients that should be available in a well-stocked pantry. Consider topping with a scoop of Greek yogurt for some extra protein.
Ingredients
4 cup peaches, sliced (approx 6 peaches) 1 Tbsp cornstarch 1 Tbsp lemon juice 1 cup rolled oats 1/2 cup pecans or almonds, chopped 1/2 cup almond flour 1/3 cup maple syrup 1/4 cup coconut oil, melted 1 tsp vanilla 1/2 tsp cinnamon 1/4 tsp sea salt
Instructions
1. Preheat oven to 375°F. 2. Spray an 8-inch square baking dish with cooking spray. 3. In a medium bowl, combine: peaches, cornstarch lemon juice. Add to baking dish. 4. In a medium bowl, combine: oats, pecans, almond flour, maple syrup, coconut oil, vanilla, cinnamon and sea salt. 5. Spoon oatmeal topping over the peaches. Gently press the mixture down using the back of the spoon. 6. Bake for 30 minutes or until topping has turned a golden brown color. 7. Optional: serve with Greek yogurt. Yum yum!
