Mashed Parsnips & Turnips

When cooked, these veggies have an earthy, sweet flavor that pairs well with grilled steak or roasted chicken. Surprise your table this holiday season with a great alternative to mashed potatoes!
Ingredients
2 1/2 lbs parsnips, peeled chopped 2 lbs turnips, peeled chopped 12 garlic cloves 2 Tbsp olive oil 1 1/4 tsp salt 1/2 tsp pepper
Instructions
1. Put the parsnips, turnips and garlic in a large saucepan. Cover with water and bring to a boil over medium heat. 2. Reduce the heat to low and simmer until tender, about 15 minutes. 3. Drain, reserving 1 cup of cooking liquid. 4. Add the oil, salt pepper. Using a potato masher, mash the vegetables, adding some of the reserved cooking liquid a little at a time.
