Black Bean Dip
Submitted by:Linsey CorbinRich and creamy, this black bean dip can be whipped up in minutes. A healthy alternative to cheesy and fat-laden dips - it provides plenty of protein, fiber and iron. Bring this to your next holiday get-together. TCD recommends serving with your favorite veggies.
Ingredients
1 (15 ounce) can of black beans 1 tsp olive oil 6 cherry tomatoes, halved 1/4 red onion, chopped 1 garlic clove, chopped 1/2 jalapeno, seeded and chopped 1/2 tsp cumin 1/4 cup cilantro, chopped 2 tsp lime juice 1/4 tsp salt
Instructions
1. Drain the black beans and reserve liquid. 2. Heat oil in a medium pan over medium heat. 3. Add tomatoes, onions, garlic, jalapeno and cumin. Cook, stirring often for 5 minutes. 4. Transfer the mixture to a food processor. Add the beans, cilantro, lime juice, salt and 2 Tbsp of reserved liquid. Puree until smooth. 5. Serve with your favorite veggies or TCD approved crackers or chips.
