Apple, Cinnamon, and Date Bars
Submitted by:Linsey CorbinChewy, nutty, and fruity, these energy-dense bars are great for fueling before a workout. They are naturally sweet, thanks to dates and apples, and have a hit of satisfying cashews. Make them ahead of time, and package them up individually in parchment paper or ziplocks for easy portability.
Ingredients
Non stick cooking spray 4 ounce pitted dates 3 ounces dried apples 1/2 teaspoon salt 1/4 teaspoon cinnamon 1 1/2 ounces cashews
Instructions
1. Line an 8 1/2 x 4 1/2 inch loaf pan with parchment paper and lightly spray with cooking spray 2. Put the dates in a small bowl. Cover with warm water and let soak for 20 minutes. Drain. 3. In a food processor combine the dates, apples, salt, and cinnamon. Process until the fruit begins to blend and stick together. Add the cashews and process again until the nuts break into smaller pieces. 4. Transfer the mixture to the prepared pan and spread into an even layer. 5. Refrigerate for 1 hour to set. Cut into 6 bars. Enjoy!
