Springtime Chicken

Ingredients
Chicken:
- 1 8-ounce container 2% Fage Greek yogurt
- 3 tablespoons balsamic vinegar
- 1 package thin-sliced chicken breast
Tomato-Mozzarella Topping:
- 1 tablespoon organic canola oil
- 1 medium-sized sweet onion, cut into 16 wedges
- 1/4 cup balsmic vinegar
- 2 tablespoons water
- 1 pound plum tomatoes; cored, seeded & diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces fresh mozzarella cheese; cut into 1-inch cubes (substitute light string cheese if on weight loss plan)
- 1 cup chopped fresh basil leaves
Instructions
1. In small bowl, whisk yogurt and balsamic vinegar until well-blended. Coat chicken with mixture. Marinate in refrigerator for 20 minutes.
2, In large skillet, heat oil over medium heat; add onion. Saute for 5 minutes or until slightly softened.
3. Add balsamic vinegar and water. Bring to simmer.
4. Reduce heat to medium-low; cook about 7 minutes or until liquid is reduced and onion is tender.
5. Increase heat to medium-high. Add tomato, salt and pepper; cook 2 minutes.
6. Remove skillet from heat; let cool 2 minutes.
7. Stir in mozzarella and basil.
8. Heat grill or grill pan to meium-high.
9. Remove chicken from marinade and grill, turning once, for 6-8 minutes per side.
Serve immediately with topping.
