Sweet Potato Salad
Submitted by:The Core DietThis salad can be a meal on it's own! Perfect substitute for the traditional high calorie, low nutrient dense potato salad. Sweet potatoes are low glycemic so don't worry if you are not in post workout window!
Ingredients
- 2 cups sweet potatoes; cut into chunks
- 1 medium apple; diced
- 1/2 cup diced celery
- 1/4 cup chopped walnuts
- 1/4 cup raisins
- 1/4 cup 2% Fage Greek yogurt
- 1/4 cup fat-free mayonaise
- 2 tablespoons skim milk
Instructions
1. In medium bowl, combine sweet potato, apple, celery, walnuts and raisins.
2. In small bowl, blend yogurt, mayonaise and milk.
3. Fold yogurt mixture into sweet potato mixture. Chill.
