Turkey Steaks with Spinach, Pears, and Blue Cheese
Submitted by:The Core DietThis light dinner gives you all you need for a Core Diet dinner: protein, fat and carbs with servigns of both fruit and vegetables! This can also be made into a lunck salad by not cooking the spinach. Just top a bed of greens with turkey breast and pear.
Ingredients
- 4 extra lean turkey cutlets (about 4 oz each)
- 1 teaspoon sage
- 1 teaspoon thyme
- 1 teaspoon marjoram
- 1 tablespoon light butter
- 1 12-ounce package (or bunch) fresh spinach
- 2 pears; cored and thinly sliced
- 1/4 cup crumbled blue cheese
Instructions
1. Make rub by combining sage, thyme and marjoram.
2. Rub turkey cutlets; sprinkle with salt & pepper.
3. Spray large skillet with organic canola oil spray; cook cutlets over medium heat for about 12 minutes, turning once. Remove from skillet.
4. Place spinach in skillet. Cook until wilted.
5. In a small skillet, cook pear slices in 1 tablespoon light butter over medium heat, stirring occasionaly for 5 minutes or until tender and lightly browned.
Serve turkey with spinach and pears; sprinkle with blue cheese.
