Salmon Burgers
Submitted by:The Core DietLooking to enjoy that post workout window? Choose this! This is a delicious alternative to your typical burger and packed with those important Omega 3 fatty acids! Use with or without a bun, or with a Joseph's low carb wrap depending on your weight loss goals.
Ingredients
- 2 tablespoons reduced-sodium soy sauce
- 1 1/2 teaspoons wasabi powder
- 1/2 teaspoon honey
- 1 pound salmon fillet, skinned
- 2 scallions, finely chopped
- 1 egg, lightly beaten
- 2 tablespoons peeled & minced fresh ginger
- 1 teaspoon toasted sesame oil
Instructions
1. Whisk soy sauce, wasabi powder and honey in small bowl until smooth. Set aside.
2. Pulse salmon in food processor until fine (or chop fine).
3. Add scallions, egg, ginger and oil; stir to combine.
4. Form mixture into 4 patties. (Mixture will be moist and loose, but will firm after side is cooked.)
5. Coat large non-stick skillet with cooking spray. Heat on medium for 1 minute.
6. Cook patties for 4 minutes; turn and cook until firm & fragrant, about 3 minutes.
7. Spoon wasabi glaze evenly over burgers; cook for 15 seconds more.
Serve immediately with tomato and red onion

Alternate sauce: 1/2 cup 2% Fage Greek yogurt, 1 tablespoon chopped fresh dill, salt & pepper.
